Beetroot Upma

Ingredients:

  • 1 cup rava (semolina)

  • 1 cup grated beetroot

  • 2 cups water

  • 1 tsp mustard seeds

  • 1 tsp urad dal

  • 2 green chilies, chopped

  • A few curry leaves

  • Salt to taste

  • Oil or ghee

Instructions:

  1. Dry roast rava in a pan until it turns slightly golden. Set aside.

  2. Heat oil in a pan, add mustard seeds, urad dal, green chilies, and curry leaves. Sauté until the mustard seeds splutter.

  3. Add grated beetroot and sauté for 2-3 minutes.

  4. Add 2 cups of water and bring to a boil. Add salt.

  5. Gradually add the roasted rava, stirring continuously to avoid lumps.

  6. Cook until water is absorbed and the upma becomes fluffy.

  7. Serve hot with pickle or curd.
