Beetroot Upma

Ingredients:
1 cup rava (semolina)
1 cup grated beetroot
2 cups water
1 tsp mustard seeds
1 tsp urad dal
2 green chilies, chopped
A few curry leaves
Salt to taste
Oil or ghee
Instructions:
Dry roast rava in a pan until it turns slightly golden. Set aside.
Heat oil in a pan, add mustard seeds, urad dal, green chilies, and curry leaves. Sauté until the mustard seeds splutter.
Add grated beetroot and sauté for 2-3 minutes.
Add 2 cups of water and bring to a boil. Add salt.
Gradually add the roasted rava, stirring continuously to avoid lumps.
Cook until water is absorbed and the upma becomes fluffy.
Serve hot with pickle or curd.
