Kothavarangai Sambar with Rice


Ingredients:

  • 1 cup toor dal

  • 200g kothavarangai, chopped

  • Tamarind extract from a lemon-sized tamarind ball

  • 2 tbsp sambar powder

  • 1 tsp mustard seeds

  • Curry leaves

  • Salt and turmeric powder

Instructions:

  1. Cook toor dal in a pressure cooker until soft. Mash it and set aside.

  2. Boil chopped kothavarangai in water with a pinch of turmeric and salt.

  3. Add tamarind extract and sambar powder, cook until raw tamarind smell disappears.

  4. Add cooked dal and bring to a boil.

  5. Temper with mustard seeds and curry leaves, then pour into the sambar.

  6. Serve hot with steamed rice and a dollop of ghee.
