Kothavarangai Sambar with Rice

Ingredients:
1 cup toor dal
200g kothavarangai, chopped
Tamarind extract from a lemon-sized tamarind ball
2 tbsp sambar powder
1 tsp mustard seeds
Curry leaves
Salt and turmeric powder
Instructions:
Cook toor dal in a pressure cooker until soft. Mash it and set aside.
Boil chopped kothavarangai in water with a pinch of turmeric and salt.
Add tamarind extract and sambar powder, cook until raw tamarind smell disappears.
Add cooked dal and bring to a boil.
Temper with mustard seeds and curry leaves, then pour into the sambar.
Serve hot with steamed rice and a dollop of ghee.
