Thandukkeerai Pesarattu

Ingredients:
1 cup moong dal (green gram)
1 cup thandukkeerai (greens), chopped
2-3 green chilies
1-inch ginger piece
1 tsp cumin seeds
Salt to taste
Oil for cooking
Instructions:
Soak the Dal: Soak moong dal in water for 4-5 hours or overnight.
Grind the Batter:
Drain the soaked dal and transfer it to a blender.
Add chopped thandukkeerai, green chilies, ginger, cumin seeds, and salt.
Grind into a smooth batter using a little water. The consistency should be similar to dosa batter.
Make Pesarattu:
Heat a tawa (griddle) and grease it with oil.
Pour a ladleful of batter and spread it evenly into a thin round shape.
Drizzle oil around the edges and let it cook until golden brown.
Flip and cook the other side for a minute.
Serve: Serve hot with coconut chutney or tomato chutney.
